I don't think you are going to be able to use too many off-the-shelf PT's for your idea but do the research and call around to make sure.  
We've built a complete Fender Twin (60 watter) and Marshall Plexi in one chassis using one PT, which was the only thing that was shared. We had the PT custom designed for us to our specs which had 2 = bias taps, 2 = separate B+ windings, 1 = filament winding, 2 = stand by switches, etc. so it's certainly able to be done.  
Oh before I forget, what does become very important is grounding so just make sure to pay close attention to layout and proper grounding as it will save you are great deal of headaches.
