PV transformers tend to be pretty robust, the extra half amp will not be a problem.  
 
Why use the 6AV6 instead of just half a 12AX7? If you use the AX, then anyone using the amp will eb able to get replacements readily. If the 6AV6 fails, they will have to order it from somewhere - no one will stock it locally.
