The EH tubes should be able to handle 495V. I myself have never had good luck with the EH power tubes (at least not purchasing directly from New Sensor). Assuming your power tubes are working properly (as well as properly biasing the amp) you should not be getting any kind of "ugly distortion." (unless you are hearing cross over distortion?)  
I would recommend going back through and double checking the ciruit to make sure everything is hooked up correctly. What type of power section did you build? Is it a 50 or 100 watt version?
