If you're checking the value of caps in the picofarad range, the extra capacitance introduced by your hand will skew the measurement.  
Ceramic caps are sold with a specified temperature coefficient. For instance, "NP0" (negative-positive-zero) caps will exhibit minimal capacitance change with temperature. Caps with tempcos like "N1500" or "P750" will display a negative or positive temperature coefficient of so many parts per million per degree. (1500 and 750 respectively in the above example). These are usually used for temperature compensation in circuits like high frequency oscillators.
