More wire tension
A wire tensioner lets you wind coils faster, though at more cost and complexity. Commercial ones start around $250, pause at $600, then loft into the stratosphere. There's got to be something for the DIY crowd.

An old US patent 4570874 from 1986 shows a minimal wire tensioner.

Guess what? It's guts are a couple of felt washers at the beginning, a pulley and, at the end, a "dancer" arm, which is little more than a small pulley on a spring-loaded stick.

Many modern tensioners have the dancer arm, even though it goes back over 50 years in the patents.

Maybe it's a good idea.

So, how hard would it be to build a dancer arm for the Lollar winder?

Not too hard, I'm thinkin'.
