Permanent Magnet Docs
The Magnetic Materials Producers Association has two fundamental documents. Durmag.com gives access to these docs at

Since guitar pickups use permanent magnets, these dox could help when you are ordering from a vendor.  
 
"Permanent Magnet Standards" describes what you should expect when a manufacturor specifies a particular alloy like Alnico 2 or 5:

"Permanent Magnet Guidelines" gives general guidelines for magnet manufacture, selection, and measurement. This one is often referenced but very hard to find, and still useful despite technical depth.

    I recall seeing a photo from the Fender factory showing a machine magnetizing the slugs in a pickup. Did they buy unmagnetized alnico pole pieces and induce the magnetic fields themselves?  
 
    So what kind of shop would have a machine like that? I was wondering about reversing the polarity for some of my single coil pickups...

They must have. It suggests that unmagnetized parts were cheaper then.  
 
Even in our benighted modern times, magnet vendors usually throw in magnetic orientation for free, however communication problems are another reason to buy the unmagnetized pieces. At least one has extraordinary difficulty understanding magnetic orientation requests for rectangular bars.

I have an old DeArmond single-coil (like on some Gretches) that has a weak field on a couple magnets.
