I test all of mine with an LCR meter. for capacitance I use the 2uf range and get readings of .03-.04 for singlecoils, P-90's run around .04 typicly, and humbuckers in the mid .02's-.03. finer wire reduces the capacitance(?) and overwinding increases it. I think inductance is a better number for output than dc resistance. I haven't got this all worked out to a science (nor do I want to) I record the numbers and use them for comparative purposes. I'm not exactly positive how it all works out empirically.

Just to add to this.... capacitance, once you've been working with it a while can quickly give you a pretty accurate indication of wire size without measuring the wire or disassembling the pickup, etc... of course this is in relation to inductance and resistance.
