||Hammond Equivalent to Standard 5E3 Power Tranny?|
I'm thinking that my first 5E3 build will be a Head Version. So, what Hammond Power Tranny would come closet to a Standard 5E3?

273CZ 325-0-325 150ma
273DX 350-0-350 90ma
373BX 350-0-350 175ma
The typical deluxe PT is around 325-0-325 70ma with a 2 amp supply for both the 6.3 volt filament and the 5 volt filament supplies. Any of the three trannies above would do it but I like the lower voltage and higher ma of the 273CZ. Bruce could chime in here as well.

Won't that 273CZ give you about 455 DC on the plates?

hammond wall voltages are spec'd with a 115V primary, keep that in mind-
they also have models that are 275-0-275 (good for tweed deluxe with SS recto) or 300-0-300 (tube recto). those would probably work much better.

a great site on the rectifier output voltages for both full wave center tapped and full wave bridge.

Not with a 5Y3 full wave tube rectifier
