I have made one LES PAUL model with mahogany and top of oak (the oak is about 1/2" thick), neck of mahogany and a Rosewood frettboard. The sound is not far from a Gibson LES PAUL with a top of maple. Tthe guitar has great sustain You can se it at my site.

The trad favs of maple and mahogany can vary widely in terms of weight. I would imagine you could find a "lighter" piece of oak. I seems that often the best figure and grain is found in heavier woods. I would suggest trying it. Two of my favorite sounding guitars are ones I made from non-kosher woods. A walnut with ebony FB flying Vee and a god awful heavy mahogany junior (great mid honk and sustain).

I also like heavy woods, but apparently those fabled old Gibsons - the ones with the now-forbidden hardwoods - carried rather light timbers. Gibson state they try to get the lightest while having nicely straight and even grain. I imagine lighter wood resonates more, which can but also cannot be a good thing.

A good comparison of several wood species  
 
is in the current issue of Vintage Guitar.  
 
I question the rateings however.
