Now I know I'm beating a dead horse here BUT, what happens when the clipping diodes are removed entirely? Also,can only one diode be used. If it matters to what end, I would say for a sweeter distortion but not neccessarily "more".

Well, if you do that then the clipping threshold is determined by the ability of the circuit and accompanying power supply to swing from the positive voltage level "requested" by the input and gain structure, to the negative voltage level requested by same. You may recognize this as the clipping produced by pushing an amp or pre-amp too hard. As long as you stay within limits there should be no clipping whatsoever.
