Hallo!  
I have found in Italy a DPDT footswitch with 4+4 pin (not 3+3)  
I paid circa $3.50.  
It’s a beautiful heavy duty DPDT.  
But I don’t know how I can do for to have a true bypass.  
Could you help me?

Hi Allesandro,  
 
I notice that no-one else has posted a response to your question, so I'll take a stab at it.  
 
You need to determine what the switch terminals do. Use a multimeter and measure what terminals are connected to what, and what changes when the switch is depressed. It's quite possible that the extra terminals are either ground lugs (and not used in this application) or maybe duplicates of other terminals (not needed in this application).  
 
Having figured that out, the basic idea of doing 'true bypass' is to connect the input to the output directly through the switch in bypass mode:  
 
Bypassed:  
 
o---to FX from FX---o  
in--- /---out  
o----direct conect----o/  
 
FX engaged:  
 
/o---to FX from FX---o  
in---/ ---out  
o----direct conect----o
