You more or less answered your own question. How much humbucking effect is lost depends entirely on how wide of a mismatch you wind.  
 
But there's another factor I've been discovering with some of my customers -- high gain can magnify the small amount of hum you get with "unbuckers" (UB's) way out of proportion to what it is played clean.  
 
I have customers who say my UB's are dead silent when played clean to moderate break-up. When they crank the gain up to heavy crunch to flat-out saturated, they do complain of some hum -- though they say it's still nowhere near as bad as a true single coil.  
 
I tell folks who order my UB's to expect a touch of hum when the hit the channel switch or stompbox. It's the price you pay for this particular tone -- at least 'til I can figure out a way to make a matched humbucker sound like that...
