Another reason I can think of why to use 2 or 3 diodes in series (like Fender did with the Twin Reverb, etc.) is due to its Peak Inverse Voltage rating. These diodes would see on the order of 1000 volts in the reverse bias state and start to conduct current (zener effect). So adding more in series will guarantee that the rectifier circuit will not break down when operating at high voltages. I learned this the hard way :)
