You can use zeners, but 75v is a lot to drop using zeners. As Bruce@ Mission Amps once told me: "That's a waste of a power transformer. :o) Otherwise, the zener trick just involves putting them between the CT of the PT and ground. A lot of people suggest using a string of smaller zeners to drop the voltage rather than a single big one.
