You might take a look at Micarta, also sold by knifemaker supply houses. Similar in composition to Pakkawood, but made with linen or paper as a base. The ivory is a near perfect match for the real thing, and the linen gets wonderfully subtle "grain" when curved. Black would be a near duplicate for ebony.  
 
I mention this because it's been my experience that the Pakkawood types are less stable than Micarta. I assume that's because there is exposed end-grain wherever the product is cut or ground, but I'm not sure. Either product is far more stable than most woods.  
 
Don't forget your mask with these, either. They're made with Phenol (phenolic plastic)and can make you quite sick if you ingest or respirate too much.
