And the reason is: a large cap represents a lower impedance to anything but DC. So when the rectifier tube tries to charge the cap, it's almost like a short and it may see more current than it can handle. A smaller cap would raise that impedance and slow things down some...  
 
Maximum recommended values, as per the tube specs, are like 40-60uF maximum, depending on the rectifier tube (GZ34 = 40 and 5U4 = 60uF, I believe).
