Epitaxial is a manufacturing process, and it produces very nice diodes and transistors. Better specs all around. It helps improve Beta, lowers the Rc, and gives better freq. response numbers. I doubt these factors will make that much difference in a diode for a solid state rectifier. I think the fast recovery is probably the most important part. Mark Baier probably used the epitaxial ones because they're more expensive and looked more badd-ass on the spec sheet. They might have a faster recovery by a small margin, but the normal ones will probably be more than enough for you tell whether fast recovery diodes can make a difference.
