I think the fast recovery is probably the most important part. Mark Baier probably used the epitaxial ones because they're more expensive and looked more badd-ass on the spec sheet. They might have a faster recovery by a small margin, but the normal ones will probably be more than enough for you tell whether fast recovery diodes can make a difference. -Chris
