I'm using the Svetlana EL34's and would highly recommend them. I haven't A/B'd them with anything else, so I can't comment on the others. With my experience I have no desire to try anything else.  
 
I'm using a mixture of a Phillips, a Sovtek (several available btw), and a Ruby for 12AX7's. I got a recommendation for these and decided to give it a shot and like the tone.  
 
My amp is a '79 and has all original caps to the best of my knowledge. They don't need changed, so I haven't bothered. This amp has been continuously used since new, so that helps these stay in good shape.  
 
There are some opinions. I think you're on the right track, so just go with it. Get the Svetlanas and if you can afford it, get several 12AX7's and  
try them.
