Sorry, but I inadvertantly ignored your question about how I'm planning to wire it up.  
 
I think I will go with tag strips, as that's the way it's done on the Lightning I've been nosing around inside of -- also, with tag strips you can pretty much simplify and, more to the point, almost 'improvise' the component layout as you go rather than plotting it out ahead of time on a board (not, of course, that you don't have to plan - but it's less 'linear', if that makes sense, less rigid). I built my 5E3 semi-clone this way, just cramming things in literally point-to-point inside the relatively tight space of a scrapped Newcomb tube gramophone chassis (good transformers and 6V6 sockets already on board) and in fact used no tag strips for that even, and it all seemed cosy and efficient, if a little tight.  
 
I know what you mean about the Hoffman boards, though: I've got his 5F6A board in a gutted ’66 Bassman head which of course wasn't a precise fit, but it works and sounds great and even in person it is indeed a very tidily and professionally made board. Very appealing. For a more complex schematic I think I'd go with that...  
 
...For this thing, though, I'm just copying the Lightning layout, adapting it to change my two different preamp channels accordingly, then linking it all up. Cool. Let's hope the *%&@ thing works!
