I just built a 5E3, and I used a MOJO Deluxe Reverb Power Transformer. With a 5Y3 rectifier, the voltages came out about right: 375 - 380V on the plates. The following info was given to me on another board:

FWIW the examples of 5E3 and 5C3 to come across my bench have had 6V6 plate voltages in the neighborhood of +385V. The one 5E3 that I measured the PT on had 370VAC per side going to the 5Y3, and delivered +398V to the OTCT, and +385V to the plates. Other voltages taken from that 5E3: 1st preamp tube supply = +252V, plate volts at 1st preamp triodes (12AY7) +125V each. Volume/tone recovery stage triode (12AX7) plate volts = 162V. The PI was 200V plate and 48V cathode. Screens were at about +340V. I have a note on the 5E3 drawing that the power tubes were acoustically  
isolated with those rubber grommet deals. Hope this helps.

As for Output Transformer, I got mine from Hoffman. With that and a WeberVST P12R, this little puppy COOKS! Many companies have Deluxe Output transformers. Actually, New Sensor supposedly has a good one, and it is relatively cheap.
