Hmm.. A difficult question  
(at least for me)  
 
Recently I felt like upgrading the Diodes in my old Fender to something more "modern." I ended up popping in glass passivated fast recovery diodes. After doing this i noticed two tone changes: the amp was a little quieter (less background hiss), and the uppper-harmonic energy increased. (upper register hiss/zing) I am blaming the extra noise (the zing) to the fact that i used carbon comp resistors in my amp, and their upper frequency character. Also inedadequate filtering may be at fault.  
 
So upgrade away from the 1N4007's at your own risk. You may like the new tonal variation, or you may not. I have been playing around with filtering for the last week or so to no avail. So last night i put the old diodes back in, but I still might go back to the fast recovery.  
 
They are cheap enough that you can order a bunch and try them all... Just beware that you might be bringing on unseen issues with filtering.
