I have never used Hammond iron for guitar amps but I do know from experience that the NS Deluxe iron you mention is killer.  
 
Also a good piece is the NSCO22848. 4K primary to 4 ohm secondary. Use it with a 8 ohm speaker and you have an effective 8K primary to 8 ohm secondary. Sounds great in a 5E3 that I just clip leaded together on the bench today.  
 
If you are like me and always changing stuff around; this is a great tranny as it allows you to later build a 35 watt, PP 6L6 or El34 amp for use with a 4 ohm speaker.
