It's a real pain when others have touched circuits before you isn't it??  
About the only suggestion I have would be to get a hold of as many muff diagrams as you can find (theres a couple on RG's and arons site). Next would be to draw out your circuit of your board. You'll probably find they're very similar in a lot of ways.  
 
Next would be to at least return it to as original condition as possible. If things get too bad, I'd just wire up one of the muff versions from a schematic, take the old board out and put in the new one.  
 
For the pots, they're most likely EH part numbers. Best off to measure them with a multimeter. For the missing pot, check out one of the diagrams, they're most likely the same.  
 
As for the opamp IC's, the 4558 is a dual op amp. The 741 is single opamp, hence the confusion.
