I think that changing the 47K resistors up and the 100 ohms down will sharpen up the clipping as well.

 
 
If you eliminate the 100ohm resistors completely, you will eliminate the control -- the pot and resistor will simply go between +V and Ground. A different solution might be to AC bypass the 100ohmers with a large value capacitor (or BFC as RG likes to refer to them).  
 
I think an interesting experiment might be to get a couple of 100ohm trimpots. Hook one end to ground, the second to the diode, and the wiper to a grounded BFC. This would give you variable "softness" for each diode.
