Just based on construction, I'd guess that it wouldn't make a noticeable difference in pedals that use diode clipping or op-amps.  
 
Transistor circuits that clip by saturating/cutting off the transistor might run cleaner with a higher voltage and dirtier (or not at all) on a lower voltage.  
 
I've found that with a Fuzz Face, the battery voltage plays a large part in what it sounds like, and I like mine *just before* they stop working altogether (somewhere just under 8V on mine). It gets way grind-y and buzzsaw-y.
